Description
Thought up by chef Mauro Colagreco for Barrière, this new dining concept is inspired by his origins. “As a child in Argentina, I grew up surrounded by the intense and softly coloured colours of fire and embers used for cooking. A well-managed fire reveals the full flavour of meat, fish, vegetables and fruits” explains this innovative chef who runs several restaurants, including the 3 Michelin star Mirazur in Menton, ranked as 1st restaurant in the world according to The Worlds 50 Best 2019.

Food and wine pairings have also been designed by chef Mauro Colagreco to enhance the flavours, making for an unforgettable gastronomic experience.

Specialities :
- Whole lamb shoulder cooked in a wood-fire oven, sweet potato with dates, walnuts and sesame sauce.
-Prime rib grilled over the embers, shortbread tart with Parmesan, Cévennes onions, meat jus and mixed leaf salad.
