Thought up by chef Mauro Colagreco for Barrière, this new dining concept is inspired by his origins. “As a child in Argentina, I grew up surrounded by the intense and softly coloured colours of fire and embers used for cooking. A well-managed fire reveals the full flavour of meat, fish, vegetables and fruits” explains this innovative chef who runs several restaurants, including the 2 Michelin star Mirazur in Menton, ranked as 4th restaurant in the world according to The Worlds 50 Best restaurants 2017.
Food and wine pairings have also been designed by chef Mauro Colagreco to enhance the flavours, making for an unforgettable gastronomic experience.
